Cantech Cut Cost of Cooking

With ever increasing energy prices the need to minimise operating costs has never been greater. Nowhere is this more important than in a commercial kitchen where the ventilation requirements relative to the cooking equipment are clearly defined by DW172. To reduce these requirements has serious implications for both the satisfactory operation of the system and the working conditions for the kitchen’s occupants. However, the important factor is that the overall ventilation rate is based on all equipment covered by the canopy being used at the same time. Clearly this only happens for a small percentage of the operating period and it is therefore possible to extract a lesser air quantity for the rest of the time.
Cantech, in association with the controls division of Mansfield Pollard, have developed “ECanoVent”, a pro-active fan management system, to automatically adjust the extract rate relative to the amount of equipment being used. Utilising frequency inverter speed control “ECanoVent” adjusts the fan speed up and down to match the cooking process.
If there is a matched supply system this can also be modulated to follow the performance of the extract. “ECanoVent” is suitable for either single or multiple canopy installations and can be used on existing as well as new installations. Even with the simplest of systems the typical payback period is less than 3 years.
